Her wedding cakes are not only stunning, but very delicious too. Trust me, with the amount of weddings I photograph in the Lynchburg, Virginia area each year, I get to taste a lot of her cakes.

How did you become interested in professional baking?

 

I was a full-time French teacher for several years, while I made cakes in the evenings for co-workers and friends.  The more cakes I made for people, the more those people told their friends.  Word of mouth is how my hobby turned into a business.  Positive feedback really encouraged me to continue trying to get better and better.  Before long, so many people were asking me to make cakes for them, and it was just so much FUN, that I dreamt of making it a full-time business.  Now, I run my own small business making primarily wedding cakes as well as cakes for birthdays, showers, retirements and graduations.  I get to spend more time with my family and have the best customers ever!  It has been a wonderfully rewarding leap of faith!

 

What was your first baking job? 

 

The first “big job” was a wedding cake that I made when I was 15.  It was huge.  It was back in the days of satellite wedding cakes (the ones that have a main cake with smaller tiers off to the sides) with plastic stairs and a fountain underneath.  Haha!

 

 

Tell me about the largest, or most complicated, wedding cake you have ever created. 

 

It was a 5 tier black and blue fondant cake.  The most difficult part was that it was topsy-turvy.  I almost had a panic attack setting it up.

 

 

Apart from wedding cakes, what are your favorite things to bake?

 

I love 1st birthday cakes!  New moms really go all out with the themes for their babies’ 1st birthday parties.  They are so excited and it’s fun to plan the party with them.

 

 

How far in advance should a bride order her wedding cake?

 

Six to twelve months in advance.  I’ve had some couples book their wedding cake over a year before their wedding date.

 

 

What have been the most popular flavors and fillings in the recent years?

 

White almond cake with raspberry buttercream filling is the most popular wedding cake flavor.  Also, chocolate cake with peanut butter filling.

 

 

What do you find most fulfilling about being a baker?

 

The final product.  I love taking the original design sketch and making into a reality.  Seeing the finished cake in its setting and how it fits in with the rest of the wedding is so special.  It really makes my heart smile.  You could say it’s the icing on the cake for me!
